Even for DineGirl, its difficult to feel inspired to make dinner when you’re schlepping home from work on the subway, and realize you only have a packet of chicken in the fridge. But with the help of a little spice mixture, simple boring rainy day chicken can be transformed into a weekday date night! We recently picked up this amazingly tasty tagine spice mix from Williams Sonoma.
Packed with flavor, this spice mix turned an ordinary baked chicken into a something fabulous.
Roasted chicken thighs with tagine spices
Ingredients:
Chicken thighs (2 packs of 3 legs)
2 Tbspn tagine spice mix
1 tspn salt
1/2 tspn pepper
1 onion, roughly chopped
handful of black olives
1 lemon, cut into 8 pieces
Directions:
Pat chicken dry and place in a medium bowl. Sprinkle over the tagine mix, salt and pepper, toss to coat. Cover with plastic wrap and let the chicken marinate in the fridge for 1-2 hours or overnight.
When ready to cook:
Take chicken out of the fridge, and let it come up to room temperature. (20-30 mins)
Preheat oven to 375 degrees
Chop onion and cut lemon
Put about 1 tbspn olive oil on the bottom of your baking dish, and place the chicken evenly in one layer, skin side up.
Toss over the onions, lemon slices and olives. Drizzle over a little olive, salt and pepper and bake uncovered for 20 min, turning over and bake for about another 25-35 mins.
Serve with chopped parsley, sea salt and fresh lemon wedges.
Roast chicken in the oven for approximately 45mins, turning occasionally to coat each side with sauce. Served here with couscous and cold beer.
