We recently stumbled upon this excellent recipe for small batch brownies. Perfect for small dinner parties of 1,2, or 3..you can easily mix of the flavor combinations by adding caramel and sea salt, toasted nuts, or even a hint of cayenne pepper for a naughty little kick. Small Batch Fudge Brownies
Ingredients:
1/2 cup all purpose flour
1/4 tsp baking powder
1/4 tsp salt
2-3 tblspn unsalted butter
2 oz unsweetened good quality chocolate (if using sweetened chocolate reduce / omit sugar)
1 cup sugar
2 eggs
1 tsp vanilla extract
optional touches : 1/2 cup chopped walnuts, pinch of cayenne pepper / sea salt for topping
Directions:
Preheat oven to 350 F / Line a 9” baking pan with foil (overhanging) and butter the foil.
In a separate bowl – whisk ½ cup all purpose flour / ¼ tsp baking powder / ¼ tsp salt
In a heavy bottom 2 qt saucepan, melt 2-3 tblsp butter + 2 oz unsweetened chocolate. Stir and melt till smooth. Turn heat off, let cool for a few minutes and add : 1 cup sugar/ 2 eggs / 1 tsp vanilla extract.
With wooden spoon, stir in flour mixture into chocolate mixture till blended. Don’t over mix. Stir in ½ cup chopped walnuts
Pour batter into prepared pan and spread evenly.
Bake 18~20 minutes until toothpick comes out slightly gooey. (Do not over bake!) Let cool in pan on wire rack for at least 2 hours to set. Then lift out of foil and cut into squares and dust with powdered sugar.
